Become one of the first Tolstoy Franchisees
We are launching Tolstoy franchising and looking for ambitious entrepreneurs to join us on the journey to make the world a better place, one Tolstoy restaurant at a time.
This is the first phase of our franchising program. Therefore, on the one hand the conditions that apply are more favorable for franchisees, but on the other hand, franchisees will work closely with us and contribute to the continuous concept development of Tolstoy.
Currently, we are looking for total of 10 franchisees in Germany, Austria, and Switzerland as well as in Denmark.

- Tolstoy is a combination of sustainable and fair business practices and high profitability (margin at ~13% due to drastic simplification of processes through software)
What’s in the package?
- No Initial Franchise Fee – we are young and want to grow with you, so we are not going to charge you to work with us
- Propriety best-in class restaurant management software (Tolstoy IS)
- Design and kitchen concept – provided at cost
- Franchise operating manual
- Recipe book with step-by-step instructions
- Support in the preparation of the business plan
- On-site support before and during the opening
- Favorable procurement terms with our suppliers
- Centrally coordinated marketing efforts
- We charge you 5% royalty of gross sales + VAT starting only from the 7th month after opening – before that we work royalty-free
Who are we looking for?
- You share our values of transparent business practices and believe in the plant-based future
- You have an entrepreneurial mindset and hands-on mentality – opening your own restaurant requires your full dedication and attention
- You have either a suitable location in a central metropolitan area (city with more than 100k population) or are ready to find and secure one (often meaning paying a contract fee - Ablöse or Afstaelsessum)
- You are ready to commit EUR 250-300k in capital to build the restaurant and get it up and running
